Easy Chocolate Cake

1 ounce unsweetened chocolate, coarsely chopped

1/3 cup water

1 pkg plain devils food cake mix

1 cup buttermilk

1/2 cup vegetable oil

3 eggs

1tsp almond extract

grease and flour two 9 inch pans. Heat the chocolate and water in a small sauce pan over low heat until melted, stirring constantly. Set pan aside to cool for 10 min.

Place the cake mix, buttermilk, oil, eggs, almond extract. and melted chocolatein a large bowl. blend with an electric mixer on low speed for 1 min. then increase mixer to high and beat for 2 min. Divide mixture evenly in pan and bake 28-30 min.

Bake the cakes until they spring back when lightly pressed with your finger and just start to pull away from the sides.

Let cakes cool for 5 min. on a wire rack. Invert cakes onto rack and let cool completely, 30 min.

You can store this cake in the refrigerator for up to 1 week.
